VANILLIN is the most produced fragrance molecule in the world, responsible for the iconic scent of the vanilla bean; mainly synthesized by lignin oxidation or ferulic acid biotransformation, it is the cornerstone of all modern gourmand perfumery. Its olfactive profile is sweet, warm, and creamy-gourmand, reminiscent of natural vanilla, custard, and butter, with considerable sweet power and great versatility in accords. In perfumery, it is present in most fragrances as a modifier or central note, in all categories from gourmand-oriental to powdery floral, and is regulated by IFRA at specific concentrations according to product categories.
