Description

Methylcyclopentenolone is a compound from the cyclic furanone family, offering a very soft gourmand-caramelized olfactory profile. Its olfactory profile is gourmand, slightly maple and caramelized, with a very pleasant natural maple syrup and brown caramel note. Naturally present in maple syrup, fenugreek, and certain roasted products, it contributes to the naturalness of gourmand accords. Used in gourmand-caramelized creations, sweet orientals, and syrup-wood accords, it brings a valuable natural gourmand authenticity. It pairs with vanillin, soft musks, and sandalwood in warm gourmand creations.
