Description
ISOAMYL ALCOHOL is a branched-chain aliphatic alcohol naturally found in many fermented alcohols (fusel oil from beer, whisky). In perfumery, its scent is fruity, slightly alcoholic, and harsh at high concentrations, but it is primarily used as a precursor in the synthesis of isoamyl esters (isoamyl acetate, isoamyl butyrate, etc.), which are important fruity components. It also contributes to certain alcoholic and fruity accords in specific contexts. Its presence in "cognac" or "calvados" type accords gives it a characteristic natural fermented dimension.
