Description

Ethyl maltol is a compound from the furanone family, offering a very powerful gourmand-caramelized profile. Its scent is intensely sweet, caramelized, and of warm strawberry, with an olfactory power significantly greater than maltol. Used in micro-dosing in gourmand creations, sweet-orientals, and fruity-gourmands, it provides immediate confectionery sweetness and a very modern gourmand touch. Its potency necessitates extremely precise dosages, in the order of a few ppm. It pairs perfectly with vanillin, creamy lactones, and soft musks in ultra-modern dessert accords.
