HEXANOIC ACID (CAPROIC), or caproic acid, is a short-chain fatty acid naturally found in some cheeses, dairy products, and fruits. In perfumery, it is primarily used as a technical raw material and synthesis intermediate for the production of fruity esters (hexanoates). Its inherent odor is not very pleasant — fatty, slightly rancid — but its ester derivatives are important contributors to natural fruity notes. It is a precursor for the synthesis of hexyl hexanoate and other fruity esters. Handled with care, it is mainly a technical tool in industrial perfumery rather than a direct component of fragrances.
