Description

2-ACETYL PYRAZINE is a synthetic raw material, of Chinese origin, belonging to the gourmand-roasted family. It has a very characteristic warm and roasted olfactory profile, with notes of popcorn, roasted hazelnut, and slightly sweet puffed wheat. A top and heart ingredient in gourmand compositions, it brings a roasted-cereal authenticity to coffee, chocolate, brioche, and dessert accords. Its perception threshold is extremely low—use at tiny concentrations (a few ppm) is recommended for a balanced olfactory effect. No IFRA restrictions.
